Ingredients:
salad roll wrappers*
stir fry noodles*, cooked according to package directions and roughly chopped
avocado, thinly sliced
tofu, thinly sliced
cilantro
carrots, thinly sliced
*you can find these in the Asian section of any grocery store, and they are super inexpensive! Also, if you make extra noodles, you can store them in the refrigerator in a container with water. This keeps the noodles from drying out and sticking to each other in a clumpy mess. Just drain them when you have the urge to make more salad rolls!
1. Get your ingredients all prepared and together. You have to work a bit fast with the wrappers, so it's best to have everything close by.
2. Immerse the dry wrapper into warm water until it softens up and becomes transluscent, about 10 seconds. Pat off excess water with a damp tea cloth.
3. Line up your fillings in the center of the wrapper, and fold! Fold the under side up, then the top portion, then roll up- like you would a burrito.
4. Eat them!
I'd like to try to make my own peanut sauce next time. I used some from Trader Joe's which was ok, but a little too soy flavored. Do you have a recipe you like to use for that?

ReplyDeletei make peanut sauce but don't follow a recipe, for a tiny batch i mix up
2 tablespoons pb
splash of soy sauce or braggs
hearty splash of an acid (lemon or vinegar)
splash of siracha
hearty splash of water
a tiny bit of honey or brown sugar
not sure if that helps at all, i constantly play around with amounts, but it's so good!
Best peanut sauce ever (I make this all the time!):
ReplyDeleteFry up a quarter of an onion and a clove or two of minced garlic in sesame or peanut oil. Add a little soy sauce. Add a few tablespoons of peanut butter and coconut milk until you get a nice consistency. Add more soy sauce and cayenne pepper to taste. So delicious!
try this raw thai nut sauce, it is seriously HEAVEN on earth:

1/2 C olive oil
1/2 C tamari sauce
1/2 C agave
4 cloves garlic
blend the almonds in a food processor or blender, then add the rest of the ingredients and blend together until smooth.

Just found your blog and have enjoyed it thoroughly. I love making salad rolls and typically whip up this simple peanut sauce in a food processor:
ReplyDelete1/2 cup Roasted unsalted peanuts
2 tbps. Soy sauce
1tsp. Sugar (i'm sure you could substitute agave nectar)
Puree til smooth and just add more soy if it's too thick, sugar if it's too salty, etc. The joy is that you can make this to fit your taste preference. :)
